HARVEST – The harvest is held in mid-November and naturally processed with cold extraction, a few hours after harvest.
EXTRACTION PROCESS – First cold extraction, from an unbroken line of 2 phases.
TASTING NOTE: Color green with golden fruit. Excellent complexity of aromas with evidence of fresh herb and apple, surrounded by some sweetness and freshness. Mildly spicy flavor green and bitter, with light acidity, a mouth engaging. Structure very thin, elegant, revealing a velvety aftertaste with notes of almond. The result is harmonious and well balanced.
